Perfect Roast Chicken

Ingredients:

  • 1 whole chicken

  • 1/2 lemon

  • 1/2 head of garlic

  • 2-4 TBSP Brummel & Brown

  • Salt and Prepper

Directions:

  1. Preheat the oven to 425* F

  2. Line an oven-safe small roasting pan with tinfoil (11” by 14”).

  3. Wash the chicken inside and out’; pat dry.

  4. Add 1/2 lemon and 1/2 head of garlic to caviety

  5. Generously season chicken inside and out with salt and pepper.

  6. Gently separately the skin from the meat, with clean hands, rub 2-4 tablespoons Brummel & Brown underneath; rub any remaining on top of skin.

  7. Bake for 1 1/2 hours; basting every 20-30 minutes
