Pasta with Asparagus, Alfredo Sauce and Poached Eggs

Ingredients:

Directions

  1. Prepare “Faux Fredo” White Sauce

  2. Start one small pot of water with white vinegar; bring to a simmer to poach eggs

  3. Bring a larger pot to a boil to poach eggs

  4. Bring a third medium pot to a boil and prepare an ice bath

  5. Add pasta to boiling water; cook for 1 minute less than as directed by box

Blanching Asparagus

6. Blanch asparagus; briefly plunge into boil water for ~20 seconds; the green will pop

How to Blanch Vegetables

7. Using tongs, remove the asparagus from the boiling water and remove to an ice bath

8. While the egg is poaching, add pasta and white sauce to a pan

9. Toss with tongs to coat

Pasta with Faux-Fredo White Sauce, Asparagus  and Poached Egg

10. Remove pasta to bowls, briefly reheat asparagus in clean pan, then top the pasta with asparagus and top with poached egg.
