Brillant Bruschetta
May this simple ummy, full flavor wholesome treat for a snack or for a lovely burst of yum to wow you friends and family! Prepare the tomato-basil mix in advance and pop these savory whole wheat toast points toast the bread and rub it down with a garlic clove just before you’re ready to eat this little beautiful bites! Servings: 26 (may easily adjust the recipe to scale if you’re not serving a small crowd)
Incredigents:
6-7 ripe plum or beefsteak tomatoes (I prefer beefsteak)
2 small garlic cloves
1/4 red onion, chopped
1/2 tbsp extra virgin olive oil
2 tbsp good quality balsamic vinegar
Olive oil mist spray
6-8 basil leaves, chiffonade (see video for an easy how-to)
Maldon sea salt flakes
Fresh ground pepper to taste
1 loaf whole grain bread, such as Dave's Killer Bread 21 Whole Grains and Seeds Organic Bread, cut to triangles
1-2 additional garlic gloves, peeled or smash
Preparation:
Prepare the Tomato-Basil Mix
Chop tomatoes to a nice dice, set aside in a prep bow
Finely dice 1/4 red onion
Mince garlic, set aside in a prep bowl
Measure out 1/2-1 tbsp olive oil and put in a pinch or tiny prep bowl
Chiffonade basil, set aside
Measure out vinegar, set side in small prep bowl
Combine ingredients in a bowl, mix gently to combine
Gently mix the ingredients to combine, careful not to bruise your lovely tomatoes!
Prepare Your Toast Points:
Preheat the broiler
Slice the bread into tidy triangles
Spray with olive oil mist
Keep an eye on the oven, toast till just golden then remove; avoid burning!
Rub with a smashed garlic clove
Assemble and serve immediately or your pretty pretty toast points will get soggy!
Sprinkle lightly with Maldon sea salt flakes
