Brillant Bruschetta

May this simple ummy, full flavor wholesome treat for a snack or for a lovely burst of yum to wow you friends and family! Prepare the tomato-basil mix in advance and pop these savory whole wheat toast points toast the bread and rub it down with a garlic clove just before you’re ready to eat this little beautiful bites! Prep Time: 10-15 minutes
Cook Time: 10 minutes
Servings: 26 (may easily adjust the recipe to scale if you’re not serving a small crowd)

Incredigents:

  • 6-7 ripe plum or beefsteak tomatoes (I prefer beefsteak)

  • 2 small garlic cloves

  • 1/4 red onion, chopped

  • 1/2 tbsp extra virgin olive oil

  • 2 tbsp good quality balsamic vinegar

  • Olive oil mist spray

  • 6-8 basil leaves, chiffonade (see video for an easy how-to)

  • Maldon sea salt flakes

  • Fresh ground pepper to taste

  • 1 loaf whole grain bread, such as Dave's Killer Bread 21 Whole Grains and Seeds Organic Bread, cut to triangles

  • 1-2 additional garlic gloves, peeled or smash

Preparation:

Prepare the Tomato-Basil Mix

  • Chop tomatoes to a nice dice, set aside in a prep bow

  • Finely dice 1/4 red onion

  • Mince garlic, set aside in a prep bowl

  • Measure out 1/2-1 tbsp olive oil and put in a pinch or tiny prep bowl

  • Chiffonade basil, set aside

  • Measure out vinegar, set side in small prep bowl

  • Combine ingredients in a bowl, mix gently to combine

Bruschetta Base

Prepare Your Toast Points:

  • Preheat the broiler

  • Slice the bread into tidy triangles

  • Spray with olive oil mist

  • Keep an eye on the oven, toast till just golden then remove; avoid burning!

  • Rub with a smashed garlic clove

  • Assemble and serve immediately or your pretty pretty toast points will get soggy!

  • Sprinkle lightly with Maldon sea salt flakes
