3-Minute Lightened-up Hollandaise with a Perfectly Poached Egg

Quick and easy 3-minute light hollandaise or “fauxlandaise”

“Fauxlandaise”

This quick and easy lightened up hollandaise sauce, or “fauxlandaise” sauce, takes about 3 minutes to make. You can prepare while you poached egg is cooking then add a dash of hot sauce for a lovely, light, high protein breakfast. Add an half and 100% Whole Wheat Arnold’s Thin Rolls for a bariatric-friendly serving of whole grains instead of a doughy English muffin. It is also marvelous over asparagus.

  • 1 egg yolk

  • 1 tsp water

  • 1 tablespoon water

  • 4 tablespoons Brummel & Brown yogurt butter or any Smart Balance Light buttery spread

  • Salt & Pepper to Taste

  1. Prepare your ingredients

  2. Wisk with the heat off, add egg yolk, water and lemon juice

  3. Turn the heat to low, slowly add the butter substitute of your choice in chunks, whisking quickly to combine

  4. Remove from heat, serve immediately
