Luscious Sugar Free Lemon Curd

I love lemon curd. I could it plain with the spoon. This lightened up, sugar free, reduced fat riff on a classic replaces regular granulated sugar with xylitol and full-fat sugar with Brummel & Brown yogurt buttery spread. This makes a small amount so it is easy to portion out. It is delicious over vanilla Halo Top, greek yogourt or overnight oats lemon better bowls.

Ingredients

  • 1/4 c of xylitol

  • 1/3 cup fresh lemon juice

  • 1 large egg

  • 4 tbsp Brummel & Brown

  1. In a small pot, add the xylitol, lemon juice and egg.

2. Before turning on the heat, whisk together the ingredient together until smooth.

3. Place the pot over low-medium heat; whisk continuously. As you whisk, the mixture will become frothy.

4. The foam will subside as you whisk constantly, approximately 5 minutes, when the mixture begins to thicken and no more liquid will separate from the foam.

5. Remove the pot from heat; 1 tablespoon at a time, which in the Brummel & Brown.

6. As the butter melts into the sauce, any remaining froth will subside and it will become more silky in texture and look glossy.

7. Once all the butter is whisked in, remove to a glass container and regridgerate in a air-tight container; the curd will continue to thicken as it cools.
