Light Pan-Fried Onion Dip

This classic onion dip will be a hit at your next party or just make a batch to snack on. Serve it with homemade low-carb whole wheat baked tortilla chips or crudites.


This is a lightened up version of Ina Garten’s classic and popular recipe for pan-fried onion dip. It omits the large serving on oil, replacing it with 1-2 tablespoon Smart Balance Light Omega-3 EPA/DHA & ALA Buttery Spread and Smart Balance Light Omega Mayonnaise extra servings of omega-3s and less fat and uses a mix of non-fat greek yogurt and light sour cream instead of full fat sour cream. You are also welcome to simple omit the light sour cream with just Greek Yogurt and a little bit of apple cider vinegar, a prepared in the video.

Ingredients

If Preparing Without Sour Cream*

  • Substitute with 1 cup nonfat or 2% Greek Yogurt and 1 tbsp apple cider vinegar

  1. Slice onions to paper-thin slices, ~1/8”

2. Heat Smart Balance Light spread or Brummel & Brown yogurt butter with Smart Balance Cholesterol Free Cooking Oil in a pan over medium heat. Add the onions, salt and pepper. Sauté over medium heat for 10 minutes.

3. Reduce heat to medium low and sauté for another 20 minutes, until the onions are caramelized (lightly browned). Remove from heat to a prep bowl and allow to cool.

4. Remove from heat to a prep bowl and allow to cool.

5. Combine cooled onions with remaining ingredients, add to either either a large mixing bowl or the bowl of a stand mixer fitted with a paddle attachment. If the cream cheese is soft enough, you can fold the ingredients and mix by hand (as in “Cook with Me” video). If it is more convenient or reach desired consistent, mix (carefully) with hand mixer - slowing increasing speed, especially if cream is not very soft. Alternately, mix in a stand mixer with a paddle attachment.

6. Serve with homemade low-carb baked whole wheat tortilla chips for a tasty whole grain treat or crudités for an extra serving of veggies.
