Bulgur Tomato Pilaf
This is Lebanese preparation of bulgur wheat creates a delightful side dish to enjoy with meal, add protein for a quick meal, or enjoy with a stir-fry.
Ingredients
1 cup uncooked whole grain red bulgur, such as Bob’s Red Mill Whole Grain Bulgur
1 small red onion, diced
1 medium tomato, diced
3 tbsp tomato paste
2 tbsp olive oil
2 cup chicken or vegetable broth
salt and pepper to taste
