Bulgur Tomato Pilaf

This is Lebanese preparation of bulgur wheat creates a delightful side dish to enjoy with meal, add protein for a quick meal, or enjoy with a stir-fry.

Ingredients

  • 1 cup uncooked whole grain red bulgur, such as Bob’s Red Mill Whole Grain Bulgur

  • 1 small red onion, diced

  • 1 medium tomato, diced

  • 3 tbsp tomato paste

  • 2 tbsp olive oil

  • 2 cup chicken or vegetable broth

  • salt and pepper to taste

Directions

  1. Chop tomato to a small dice (Video Tutorial: How to Slice a Tomato)

3. Add olive oil to a small pot, when hot add onion, season with salt and pepper

4. When the onion is translucent, add tomato paste to pot

4. Stir to combine; heat until paste and onion mixture darkens, slightly caramelized.

5. Add bulgur wheat and broth to pot.

6. Bring to a boil; cover.

7. Reduce heat to a simmer and cook until tender, about 12 minutes

8. Stir in tomato, letting cook with remaining liquid.

9. Drain excess Liquid in cooked Bulgur pilaf and fluff with fork. Serve with a with yogurt, add to a salad or serve as a side dish such as a dstir fry.
